At 70, the chef who has served since 1976 can congratulate himself on a fine career. Owner of three restaurants in Paris: “Pierre Gagnaire” (3 stars in the Michelin Guide since 1993), “Gaya, cuisine de bords de mer” and “Piero TT”; he is also a consultant-designer for some fifteen establishments in France and abroad, including four in Asia. Latest creation: "Duende" at the Hotel Impérator in Nîmes. Since 2016, he has worked with the Barrière Group to develop the Fouquet’s brand; it has also just opened in Cannes at the Hotel Majestic the restaurant "Paradiso". In 2020, he obtained 3 stars for his London restaurant "Lecture Room" at the Sketch. His motto: “Cuisine cannot be measured in terms of tradition or modernity. We should just read the tenderness of the cook ”.
