A strict policy regarding compliance with safety and health rules is applied to ensure a healthy environment for customers and staff. The establishment complies with HACCP standards (Hazard Analysis and Critical Control Points system), hygiene training is mandatory for kitchen teams handling food, and samples are regularly taken by a specialized laboratory.

The chefs Fabrice and Thierry and their teams aspire to encourage a more sustainable dining model, combining pleasure, quality, and respect for the environment, by offering their guests local and seasonal products, as well as vegetarian dishes.

The hotel and the Mademoiselle Gray beach collaborate with many local suppliers such as the market gardener Jean-Charles Orso, the producers of La Pousseraie de Nice, and the Puget-sur-Argens Fishmonger.

In 2024, the Mademoiselle Gray beach has also initiated a collaboration with Château Sainte Roseline, a vineyard in Arcs-sur-Argens around a biodynamic cuvée offered on the restaurant's menu, in addition to its wide selection of organic wines.

In order to meet customer expectations, environmental challenges and to raise awareness among teams about vegetarian cuisine, every year, chefs are invited to compete by creating a vegetarian dish. The finalists have the opportunity to present their creation to an expert jury at Fouquet’s Paris. The dishes of the winners (one winner for the casinos and one winner for the hotels) are then offered on the menu of the Group's restaurants during the European Sustainable Development Week.

The Barrière Hotel Gray d'Albion Cannes is particularly proud to support local craftsmanship, notably through the supply of plates and vases for the Mademoiselle Gray restaurant by addressing the talented ceramist Tino Aiello from Vallauris.

The hotel also hosts captivating exhibitions by the talented artist Olivier Domin, better known by his artistic pseudonym OLLL. Imagined in his workshop in Suquet in Cannes, his works have won over an international audience.

Many solidarity actions are also carried out throughout the year, food, clothing, and toy collections are organized in favor of associations such as the French Red Cross, the French Popular Relief, or Les Bouchons d'Amour.

Partner for many years with the Adrien association, which helps sick children, the hotel supports its operation financially but also by offering raffle prizes for its bingo games.

The hotel teams were also invited to its twentieth anniversary in 2025.
