Fish: our Chef has chosen Arctic char, a local freshwater fish, thus favoring local producers and short supply chains.
Meats and condiments: our meat suppliers, La Cave du Boucher, and sauce, jam, and condiment suppliers, La Maison Laurino, are members of the “Collège Culinaire de France”.
