In order to meet customer expectations and environmental challenges and to raise awareness of vegetarian cuisine among staff, each year chefs are invited to compete by creating a vegetarian dish. The finalists have the opportunity to present their creations to a panel of experts at Fouquet's Paris. The winning dishes (one winner for the casinos and one winner for the hotels) are then featured on the Group's restaurant menus during European Sustainable Development Week.
