Chef Jérémy Coirier highlights local producers and products in his cuisine such as strawberries from Burban, seaweed from the farm in Croisic, pigeons from Mesquer, and bread from Maison Airaud.
To meet customer expectations, environmental challenges, and raise awareness among teams about vegetarian cuisine, every year, chefs are invited to compete by creating a vegetarian dish. The finalists have the opportunity to present their creation to an expert jury at Fouquet’s Paris. The winning dishes (one winner for casinos and one winner for hotels) are then offered on the menu of the Group's restaurants during the European Sustainable Development Week.
