At the heart of the Pavillon, Michelin-starred Chef William Elliott reimagines French gastronomy with both boldness and finesse. Each dish reveals a delicate harmony, inspired by the freshest market finds and the rhythm of the seasons. The menu invites guests on a sensory journey through five- or nine-course tasting experiences. Our sommelier curates a distinguished selection of wines to perfectly complement the chef’s creations.
The Pavillon welcomes guests into an intimate cocoon of black and ochre hues. Animal sculptures by Paul Jouve, evoking the golden age of the 1930s, enliven the architecture conceived by Bruno Borrione. The dining room opens onto a sunlit terrace, offering a tranquil view of the gardens and the iconic Canche lighthouse. As evening descends, soft lighting highlights every architectural detail.
