B for Barrière, Fire for wood-fired cuisine. This new dining concept, created by top chef Mauro Colagreco for Barrière, is inspired by his roots: "Cooking over fire and embers is the fierce and muted style of cuisine I’ve known since my childhood in Argentina. An expertly controlled fire can deftly reveal the flavours and nuances of meat, fish, vegetables and fruit” explains this innovative chef, who heads up several restaurants including Le Mirazur in Menton, which has 3 Michelin stars and is ranked 1st in the world according to The World’s 50 Best restaurants 2019 list. 

At BFire, shoulder of lamb is served confit and accompanied by sweet potato and dates, with a squash salad starter cooked on a wood fire, accompanied by soft Burrata cheese and truffle shavings, with a blueberry ‘snowball’ for dessert… Cultivating a taste for excellence and showcasing inventive, delicate and inspired wood-fired cuisine are the watchwords of BFire by Mauro Colagreco; a must-discover menu that’s sure to surprise even the most demanding palates.
