At the helm of eleven restaurants in Paris, London, Moscow, Hong Kong, Las Vegas and Dubai, he has been pursuing a limpid and creative culinary quest for half a century, since taking his first steps as an apprentice commis in April 1966. As historian and publisher Anthony Rowley once said, there's Picasso in Gagnaire... and this talented chef never ceases to surprise.
